Chicken Tortilla Soup

 Recipe:  2 lbs. boneless skinless chicken thighs  1 cup water  1 tbsp. olive oil  1 onion  2 zucchini  2 red peppers  2 tbsp. cumin  2 tbsp. chili powder  1 tbsp. minced garlic  1 tbsp. hot sauce (or to your taste)  2 15 oz. can of petite diced tomatoes  1 15 oz. can of tomato sauce  4 cups chicken broth  salt/pepper    Cook chicken in pot with water. Remove from pot and set aside. Heat oil and toss chopped onion. A few minutes later add chopped zucchini and peppers. Flavor with the spices and stir until veggies soft. Add hot sauce, tomatoes, tomato sauce and chicken broth. Add chopped chicken. Salt and pepper as desired. Bring to a boil and then simmer for a few minutes. Garnish with avocado, sour cream or cilantro!
